Being Healthy Doesn’t Have to Mean Skimping

Being a doctor I have to often tell a patient they need to make some changes in their life. Often time those changes consist of what many might consider sacrifices, but they don’t have to be.

Healthy habits do tend to pay off in dividends over the years even if they might be hard to start at the beginning. Take exercise for example; It’s hard to get started, with the muscle soreness, the tiredness, and often the feeling of just not being able to achieve your goals. But given enough time everybody who starts to exercise and gets past that initial phase will reap the benefits.

A common theme in our practice is healthy eating. Eating an organic, gluten free, and anti-inflammatory diet is common advice for our patients. Learning how to do this may take a little bit of time, but it doesn’t have to mean giving up your favorite foods. I’ll give you a personal example from my own life.

One of my favorite indulgences in my diet is not very healthy. It’s Rice-A-Roni! You know, the $0.99 San Francisco treat. I don’t know why. Maybe it was growing up watching The Price is Right on the days I got to stay home from school with my grandmother. But if you’ve ever looked at the label of what’s in that stuff, it’s terrible! But I don’t miss it because I found a way to make it at home, and make it healthy.

The changes are simple, even though its not low carb, it comes out being quite healthy. The recipe is simple:

  1. Your favorite brand of gluten free spaghetti broken up into small pieces to form the Roni.
  2. Organic whole grain rice, about a cupful.
  3. Two and a half cups of organic chicken broth.
  4. Two tablespoons of Kerry Gold butter, or coconut oil.
  5. Small chopped up pieces of carrot, celery, and parsley. Preferably organic.
  6. Salt, pepper, garlic salt and onion powder. Again, preferably organic.

And it’s easy to make! Melt the butter or oil in a saucepan, add the rice and Roni mix, and stir until the spaghetti turns dark brown. Add the broth, vegetables, and spices and bring to a simmer. Cover, and cook until all of the liquid is absorbed. Fluff with a fork, and enjoy!
